High Holy Days – Part I – Holy Mackerel, it’s Rosh HaShana

Gevalt. Another year has past and the same question remains: what to make for dinner? This year, try a whole baked Mackerel. It’s on theme, healthy, delicious, and easy! And it will make your grandmother happy.

You’ll need:

A whole mackerel
Citrus (I used oranges and lemons)
Garlic
Cilantro
Black pepper
Olive oil
Sea salt
Gumption

How to do it:

Clean the fish. Usually you can ask the fish monger to do this for you. Lay it flat. Take some crushed garlic and sliced citrus and stuff it in the main cavity. Drizzle with some olive oil and finish with black pepper and sea salt.

Bake for 20 minutes at 400º.

Filet tableside by grabbing the tail and relieving the body of its skeleton. Serve with an emulsification of squeezed lemon, black pepper, a pinch of garlic, sea salt, and olive oil. Watch as your grandmother groans in delight.
